The "official" history of the vegan philosophy begins in the mid-twentieth century, specifically in 1944, when a group of friends led from the English Donald Watson decided to found the Vegan Society in order to gather and coordinate vegetarians who, in everyday life, not consumed or used any product of animal origin or derivation.

The "vegan" term was coined by the founder himself using the first and last letters of "vegetarian"; according to Watson "the beginning and end of vegetarian." It was founded in 1960 in the United States the American Vegan Society, and to this day the vegan company are widespread worldwide. On November 1 of each year is celebrated the World Day of the Vegans.

The word "veganism" denotes a philosophy and a way of living which aims to exclude - to the extent that this is practicable - all forms of exploitation and cruelty to animals perpetrated to produce food, clothing or any other purpose ; and by extension, promotes the development and use of non-animal alternatives, for the good of man, animals and the environment. From a dietary point of view it indicates the practice to avoid any product derived, in whole or in part, from the animals.

Users who choose the vegan cuisine, who are known as vegans, categorically exclude the use of animals as a source of food, clothing or any other function. From their diet are therefore naturally excluded meat and fish, but also all those products arising from animals such as milk, dairy products, eggs, honey, gelatin, isinglass, casein, added whey, rennet. Among the products of daily use, however, are banned fur, leather, wool, silk, lanolin, beeswax, and even the carmine red, dye produced from an insect, the cochineal (Dactylopius coccus) and shellac, insect Kerria lacquer's secretion. Obviously they are also banned poisons and insecticides.
